We harvest honey a hive at a time, several times each year, capturing the nuances of each colony's foraging pattern. This small batch, artisanal approach to beekeeping yields several distinctive harvests throughout the honey season. Our spring harvest is pale yellow with a clean, subtle flavor perfect for sweetening without adding complexity. As the summer progresses, each harvest will get darker, with a more robust caramel flavor. The bees sometimes surprise us with unique nectar source that produces an equally unique honey, which we offer as a limited edition in our honey line up.
